The kokoretsi is usually baked next to the Easter lamb, but it’s same delicious in the oven as well. It is the preeminent food which accompanies the rest of the spit roasts on the Easter table, even though it has been associated with all the major holidays that require meat eating.
His technique is special in order to succeed since the liver and the sweetbreads used must be passed alternately and wrapped with the intestines.
COOKING INSTRUCTIONS: Grill on a spit Covered for 2 ½ hours, uncover and bake for 1 ½ hours on a low grill or wrap with baking paper and aluminium foil and bake in the oven for 2 hours.
STORAGE: Keep frozen between -18°C – -22°C.
